  • Exploring the Diversity of Indian Cuisine & Top Restaurant Finds Across the Country

    Hi everyone,

I’ve recently been diving deep into the rich world of Indian cuisine—from the fragrant curries of Punjab to the seafood-heavy plates of Kerala, from quick street-food snacks to high-end dining experiences. While browsing through the “Indian Cuisine and Restaurants – IndiaForum” section of IndiaForum I thought: why not start a dedicated thread here where we can all share our favourite dishes, restaurant gems (in India or abroad), regional food discoveries and dining tips?

Here are a few prompt ideas to get us rolling:
    • Favourite dish & region: What dish completely blew you away? Where did you try it?
    • Restaurant recommendations: Share your most memorable dining experiences—premium, casual, or hidden-local.
    • Regional surprises: Have you discovered lesser-known regional cuisines (e.g., Arunachal, Himachal, Lakshadweep) that deserve more recognition?
    • Dining abroad: How do Indian restaurants or Indian-influenced menus abroad compare?
    • What’s changing: How has the dining landscape in India shifted in recent years (menus, ambience, fusion, food tech)?

To kick things off, here’s my pick:

My standout dish: The Hyderabadi dum biryani I had at a small Irani-cafe in Hyderabad. The aroma, the slow-cooked flavour, the tender meat-rice mix—it felt like a masterclass in patience and layering of taste.

Top restaurant find: A contemporary fine-dining spot in Delhi which offered modern takes on regional classics (e.g., mango-wood roasted fish, millet-based desserts). The ambience was minimalist, allowing the food to shine.

Regional gem: I was recently in Udupi, Karnataka – the coastal vegetarian thali there had such fresh coconut-based curries, appams and banana-leaf service that I almost forgot I was in India’s south-west.

So over to you! What’s the most unforgettable meal you’ve had? Which restaurant would you travel back to just for the food? And what regional cuisine do you believe the rest of India (or the world) should know more about?

Looking forward to your stories, photos, and recommendations!

I absolutely love the idea of sharing our culinary adventures across India and beyond—it’s such a rich and diverse food culture that deserves all the spotlight. Your Hyderabadi dum biryani story made me nostalgic! There’s something truly magical about those slow-cooked flavors that stay with you long after the meal. And your find in Delhi sounds fantastic—I’m always intrigued by how chefs reinterpret traditional dishes with a modern twist. To add to the conversation, one unforgettable meal for me was the Rajasthani thali I had in Jodhpur. The variety of dal baati churma, gatte ki sabzi, and ker sangri was a delightful explosion of flavors and textures. The rustic charm of the local eateries made the experience even more special. I’m excited to hear more stories and recommendations from everyone here. This thread is going to be a fantastic resource for food lovers like us!

Exploring the diversity of Indian cuisine is truly a journey through culture, history, and regional identity. From the rich, creamy gravies of North India to the spicy, coconut-infused curries of the South, every state has its own signature flavors and cooking traditions. Whether it’s the street-side chaat of Delhi, the royal biryanis of Hyderabad, or the delicate seafood dishes of Kerala, Indian food offers something for every palate.

For those eager to explore, top restaurant picks include Karavalli (Bangalore) for authentic coastal cuisine, Bukhara (Delhi) for its legendary tandoori dishes, Oh! Calcutta (Kolkata) for Bengali delicacies, and Britannia & Co. (Mumbai) for classic Parsi fare. Each dining experience captures a unique slice of India’s culinary soul—vibrant, flavorful, and unforgettable.

What a deliciously inviting thread — you’ve captured the true spirit of India’s culinary diversity so well! Every region here feels like a different food story waiting to be told. I completely agree about Udupi — their simple yet soulful thalis are unforgettable. For me, one standout experience was in Amritsar, where I tried kulcha with chole and lassi at a local dhaba near the Golden Temple — no fine dining could match that warmth and authenticity.

Another gem was Karavalli in Bengaluru — their seafood curries perfectly balance spice and depth, each bite telling a coastal tale. I also love how Indian cuisine abroad is evolving; restaurants in London and Toronto are finally celebrating regionality beyond “butter chicken and naan.”

Threads like this are such a treat — can’t wait to read everyone’s stories and maybe even build a foodie travel list from it!
